This is Marco Canora’s third book and like his other books it does not disappoint and lets you into the secrets of making the wonderful broth that he creates everyday and sells from the window of his little shop in East Village area of New York City. Marco opened his restaurant Hearth in 2003 and made bone broth from scratch for soups and risottos he served. In 2014 he opened Brodo, a broth company in a a little space with a serving window on the backside of Hearth.

Marco shares his secrets and techniques for making healthy, nutritious, and healing bone broths in this new cookbook. The book is comprised of two parts, the first has extensive fascinating information about the research and health benefits of bone broth. There is a great insert page that discusses the history of bone broth through time around the world that is a great extra small addition that he added to the book in addition to recipes and health facts. Included in the first portion of the book is a three day bone broth broth reset program for the readers. Before the author moves into all the fabulous recipes, he teaches you all the basics and shows you what you will need for creating broth that has both the maximum nutrients and is a flavorful broth with the least amount of work. The secret is in the constant simmering!
The recipe section is outstanding. He includes his famous three broths that are the foundation of the Brodo company including Grass Fed Beef with Ginger, Organic Chicken and Marco’s signature broth Hearth. In addition he includes many other broth and risotto recipes in the book.
The cookbook is fun to read, interesting, and informative. Everything from the cover to the words are beautifully done and well thought out. Marco catches your eye from the very start with a small hardback book with an orange textured top half of the book that is embossed with the author’s name and the title of the cookbook in all lowercase letters. The photography on the cover and inside the cookbook are stunning to view and the health information and recipes are outstanding.
